HOW TO Germinate Brown Rice
Total time taken, approximately 2days, 48hours.  12hours of soaking follow by 3 times of rinsing every 12hours.

Ingredients
1 cup (rice cup) = 3/4 cup (measuring cup) = approximately 145g brown rice

Instructions
1.   Wash and rinse the brown rice till water runs clear.
2.   Place the brown rice in a bowl.
3.   Pour enough filtered water to keep the rice submerged.
4.   Cover with cling wrap or a damp towel.
5.   Place the bowl in a dark, draft free area.  I put the bowl in the oven.  Soak the brown rice for 12hours.  
6.   Rinse the rice a couple of time.  Drain well.  
7.   Transfer the brown rice to a large strainer, put a glass bowl below it.  Cover it with a damp towel or cling wrap.
8.    Repeat the rinsing every 12 hours for 3 times.
9.    The brown rice has germinated after 48hours.  Rinse and drain the GBR well.  Transfer to a covered container.
10.  Every grain of GBR is plumped and at the tip, little sprout has pop up. 
11.  The GBR can be cooked or kept in the fridge up to 3 days.

HOW TO make Sourdough Starter

What is Sourdough Starter


Sourdough starter is a colony of micro-organism comprising wild yeasts and lactobacilli.  This natural leaven is cultured from fermenting flour with water over a period of time.  It can be used to replace commercial yeast to make bread.

Grains contains wild yeasts and lactobacilli, lactic acid bacteria.  After milling, the flour, too contains them.  Mixing flour and water allows the lactic acid bacteria to develop and the acidic environment allows the wild yeasts to multiple.  The lactic acid bacteria metabolise carbohydrates in flour to form simple sugar.  The wild yeast uses that sugar and also metabolise the carbohydrates in flour and produces bubbles of carbon dioxide, which helps the dough to rise.  The tangy flavour of sourdough bread comes from the acetic acid produced by the lactobacilli during the fermentation process.


Benefits of Sourdough Bread

Some people experience stomach discomfort such as bloated or indigestion, after ingesting bread.  They could be suffering from certain degree of gluten intolerance.  The good news is that some of them can tolerate sourdough bread. How is that possible?  Well, sourdough bread is different from the commercial bread.  It goes through a long and slow fermentation in which the lactobacillus, the lactic acid bacteria, present in the sourdough starter, breaks down the carbohydrates and gluten in the bread, making sourdough bread more digestible.

Sourdough bread is also more nutritious as the fermentation process also breaks down phytates and releases the nutrients making minerals more bioavailable to our body.  Phytic acid, an anti-nutrient substance is present in grains, is also present when grains are milled as flour. This substance binds with minerals e.g. iron, zinc, in our digestive tracts, inhibiting such mineral been absorbed by our body.  When phytic acid binds with a mineral in the grain, it is known as phytate.  Those binded minerals will not be absorbed by our body but are excreted as waste matters instead.

Sourdough bread is also diabetics' best choice bread if they want to eat carbohydrates as the bread has lower glycemic index. 

Sourdough bread also has a naturally longer shelf life as the acetic acid produced during fermentation, inhibits the growth of mould, without any artificial preservatives.

How to make Sourdough Starter

In Singapore climate, it takes about 5 days to cultivate a sourdough starter from scratch with 2 daily feedings, 12hours apart.  I've use equal parts of flour and water by weight.  For the first 4 days I fed the starter with atta flour, an Indian finely milled wheat flour.  On end day 4 onwards, I fed it with bread flour instead of atta flour.  

It is important to vigorously stir the flour and water in order to incorporate all the dry bits of flour with water.

The following is my 5 days feeding journal:

Day 1 - 30/7/2017

8am
In a glass bottle, combine 10g atta flour + 10g filtered water and stir well.  
Cover the bottle with a cloth, secured by rubber band.
8pm
Pour 20g filtered water into a glass bottle, stir well to combine.
Add 20g atta flour, stir well to combine.
Cover the bottle with a cloth, secured by rubber band.

Day 2 - 31/7/2017
Presence of air pockets indicates that fermentation activities has kicked in
8am:  Observation - dough has doubled in height
Pour 60g filtered water into the glass bottle, stir well to combine.
Lots of bubbles surfaced when water is poured into bottle
Add 60g atta flour, stir well to combine.
Cover the bottle with a cloth, secured by rubber band.
8pm:  Observation - dough has doubled in height
Discard most of the dough, leaving 20g behind.
Pour 20g filtered water into the glass bottle, stir well to combine.
Add 20g atta flour, stir well to combine.
Cover the bottle with a cloth, secured by rubber band.
Day 3 - 1/8/2017
8am:  Observation - dough has doubled in height
Pour 60g filtered water into the glass bottle, stir well to combine.
Add 60g atta flour, stir well to combine.
8pm:  Observation - dough has tripled in height
Discard most of the dough, leaving 20g behind.
Pour 20g filtered water into the glass bottle, stir well to combine.
Add 20g atta flour, stir well to combine.
Cover the bottle with a cloth, secured by rubber band.
Day 4 - 2/8/2017
8am:  Observation - dough has at least doubled in height
Discard most of the dough, leaving 20g behind.
Pour 20g filtered water into the glass bottle, stir well to combine.
Add 20g atta flour, stir well to combine.
Cover the bottle with a cloth, secured by rubber band.
8pm:  Observation - dough has at least doubled in height
Discard most of the dough, leaving 20g behind.
Pour 20g filtered water into the glass bottle, stir well to combine.
Add 20g bread flour, stir well to combine.

Cover the bottle with a cloth, secured by rubber band.
Day 5 - 3/8/2017
8am:  Observation - dough has at least doubled in height
Discard most of the dough, leaving 20g behind.
Pour 20g filtered water into the glass bottle, stir well to combine.
Add 20g bread flour, stir well to combine.

Cover the bottle with a cloth, secured by rubber band.

Observation: the dough tripled within 3.5-4.5hrs.
2pm:  Observation - dough already peaked and collapsed a little
Discard most of the dough, leaving 20g behind.
Pour 20g filtered water into the glass bottle, stir well to combine.
Add 20g bread flour, stir well to combine.

Cover the bottle with a cloth, secured by rubber band.
8pm:  Observation - dough tripled in height
**  I did a float test on the sourdough starter - drop a dollop of the starter into a small cup of water.   The starter floats on water, indicates that this sourdough starter is ready to be used to bake bread.

The sourdough starter is ready when it can consistently doubled or tripled in height within 3hours.

The next day, I used this new starter to make a Simple Sourdough Artisan Bread.

HOW TO homemade Anchovies (Ikan Bilis) powder

According to this article, a research study was conducted in Singapore in 2015 claimed that anchovies should be eaten whole, including its head and organs - “It is found that the consumption of the cleaned body resulted in a significant reduction in calcium (8-fold difference), iron (2-fold difference) and zinc (1.5-fold difference) compared to the whole anchovy.”

After reading that, I bought whole anchovies to pulverise and reserved some to snack on.




Ingredients  

250g    dried whole anchovies (small ikan bills)

Instructions

1.    Preheat oven to 80°C fan/100°C.
2.    Place the anchovies in a colander and give it a good rinse to reduce the salt level.
3.    Line a baking tray with baking paper.
4.    Spread the anchovies evenly on the baking paper.
5.    Give the anchovies a toss every hour.
6.   Bake the anchovies for 5-6hrs or until the anchovies are dry and crispy.
7.   Cool the dehydrated anchovies and they are ready to be stored away.
8.   To make the anchovies powder, simply grind the cooled dried anchovies.
9.  Voila!  All bottled up.

HOW TO prepare oats

A warm bowl of nutritious oatmeal is many people's healthy breakfast choice.  It is indeed a wise choice as consuming the high fiber oats helps us lower our LDL, "bad" cholesterol, and keeps our heart healthy.  Having a low glycemic index, oats stabilises our blood sugar level.  Prepared correctly (to soak it overnight), oatmeal keeps us feeling full longer.

Oats contain phytic acid, an anti-nutrient substance which binds to important minerals (such as copper, iron, zinc, etc.), inhibiting the body's absorption of those minerals.  To reduce this anti-nutrient, traditional practice requires soaking the oats overnight in some acidic medium, eg. lemon juice, apple cider vinegar, yogurt, whey, buttermilk or kefir.  In so doing, digestibility of oats improved.  Without the soaking, some people may experience bloatedness or digestive issues after consuming oatmeal.  Thus, it is advisable to soak the oats for at least 8hours, or up to 24hours, before cooking them.

Soaked and drained oats

Ingredients
1 cup   Warm Filtered Water
1 cup   Old-fashioned rolled oats
2TBS   whey/lemon juice/apple cider vinegar


Instructions


1.    In glass bowl, add the rolled oats, water and whey.  Give it a good stir and let it stand overnight (at least 8hours). 

2.    Pour the soaked oats into a mashed strainer.  Rinse,  drain well.  Voila!  The oats is now ready at your disposal.

HOW TO eat turmeric

Turmeric is the yellow powder found in curry powder.  It contains curcumin, a substance which gives turmeric its anti-inflammatory and antioxidant properties.  Besides that, it also has cardiovascular benefits and lowers cancer risk.

In order for our body to properly absorb curcumin into the bloodstream, turmeric has to be consumed with black pepper and some form of fats.  Black pepper contains piperine, a substance which enhances the absorption of curcumin.  Since, cucumin is also fat soluble, turmeric has to be consumed with healthy fats, eg nuts and seeds, avocado or coconut oil.

Also, gentle cooking not only doesn't degrade the medicinal properties of turmeric, it enhances its bioavailability.



Turmeric is generally safe to consume but do so in moderation.  However, if one is on medication, it is best to consult a doctor before using this spice.
