Low Sugar Flourless Quinoa Muffins

These muffins are for breakfast and I kept the addition of sugar to the minimum.  Sweetness comes from 2 dark chocolate chips per muffin and dried fruits.




Ingredients  (makes 10-12muffins)

200g    plain yogurt
80g      rolled oats
160g    cooked quinoa
160g    cooked azuki beans
1          egg
24        dark chocolate chips (optional)
30g      sultanas or dried fruits of your choice
3          whole figs, diced
30g      chopped nuts of your choice


Instructions

1.   Preheat oven to 180°C.
2.   In a large bowl, mix all the ingredients together.
3.   Fill each muffin tray cavity about 1/2 full with the batter.
4.   Put 2 chocolate chip into each muffin tray cavity.

5.   Top with remaining batter so that each cup is about 90% full.



6.   Bake 25min in the preheated oven.
