Sweet Potato Oats Porridge

Breakfast is the most important meal of the day.  This nutrient dense Sweet Potato Oats Porridge is very suitable to enjoy during the weekends as it takes slightly longer to prepare.  Many healthy ingredients, such as black beans, sweet potato, wolf berries & wakame are added.  Wolfberries, also known as goji berries, are full of anti-oxidants and said to have anti-inflammatory properties.  Miso, a probiotics food, contains active cultures of bacteria, is also added.  It is added after cooking has completed.  Do not add miso while cooking as this will kill the live bacteria present.




Ingredients
  • 2 medium sized sweet potato, pared and cut into wedges
  • 1/4 cup               cooked black beans
  • 2 TBS                dried wakame seaweed, reconstituted in water for 10min
  • 1 TBS                ground flaxseed
  • 16                      dried longans
  • 1TBS                 dried wolfberries, (goji berries) reconstituted in water for 5min
  • 2 TBS                purple chinese yam powder (optional)
  • 1 TBS                miso
  • 4 cups               old-fashioned rolled oats
  • 2 litres               water
Instructions

1.    To a large pot, add 2litres of water, sweet potato and rolled oats.
2.    Bring to a boil and simmer for 15min.  Stir occasionally to prevent the oats from sticking to the pot.

3.    Add 1/4 cup water to a blender and blend the wolfberries, which aids in  better absorption of nutrients by the body.
4.    Add the purple chinese yam powder to the wolfberries mixture and mix well.

5.    Add all the wolfberries mixture and the remaining ingredients to the pot of cooked oats.  Mix well. 

6.    Voila!  Sweet Potato Oats Porridge is ready to be served.
