Roasted Sweet Potato Frittata

The anti-cancer Sweet Potato is the star ingredient of this frittata.

Ingredients

1              large sweet potato, cut into cubes
1TBS       Olive oil
1/2tsp      Fresh / dried Rosemary (optional, or other herbs)
Salt & Black pepper to taste

4              Eggs, lightly beaten
1/4cup     cooked green peans
1/4cup     cooked black fungus

1tsp         Garam Masala (optional)
Salt and ground pepper to taste

Instructions
1.    Preheat the oven at 180°C.
2.    In a large bowl, add the sweet potato cubes.
3.    Drizzle 1TBS olive oil over the sweet potato cubes.
4.    Sprinkle sprinkle rosemary over the sweet potato cubes and add salt and pepper.
5.    Give the potato cubes a good massage.
6.    Roast at the pre-heated oven for 20min or until fork tender.
7.    Leave to cool.
8.    Whisk egg and seasoning together
9.    Add the roasted sweet potato, black fungus and green peas.  Mix well.
10.  Heat a 8" cast-iron/heatproof skillet.
11.  Add a tablespoon of oil of your choice.  Swirl the skillet to distribute the oil evenly.
12.  Pour the egg mixture into the hot skillet.
13.  Cover and cook over medium low flame for 3min.
14.  Transfer the skillet into the pre-heated oven and bake for 15min-20min or until fully cooked.
15.  Voila!  Roasted Sweet Potato Frittata is served!
