Grated Sweet Potato is the key ingredient in this simple frittata prepared for breakfast.
- 4 eggs, lightly beaten
- 1/4 cup cooked green peas
- 1/4 cup cooked black beans
- 1/4 cup frozen spinach
- 1 medium sized sweet potato
- Salt and black pepper to taste
1. Preheat the oven at 190°C.
2. Grate the sweet potato and soak in water to get rid of excess starch.
3. Drain excess water from the sweet potato by spinning it in a salad spinner.
4. Whisk the egg and seasoning together before add the remaining ingredients. Mix well.
5. Heat a 8″ cast-iron/heatproof skillet.
6. Add a tablespoon of oil of your choice. Swirl the skillet to distribute the oil evenly.
7. Pour the sweet potato egg mixture into the hot skillet.
8. Cover and cook over medium low flame for 3min.
9. Transfer the skillet into the oven and baked for 15min-20min until fully cooked.
10. Voila! Simple Sweet Potato Frittata is ready to be served.
