Ingredients
- 4 eggs, lightly beaten
- 1/2 cup cooked chickpeas
- 1/4 cup cooked black beans
- 1/4 cup cooked peas
- 1 medium sized potato
- 2 tsp garam masala
- dash of turmeric
Instructions
1. Preheat the oven at 190°C.
2. Grate the potato and soak in water to get rid of excess starch.
4. Whisk the eggs and spices together, before adding the remaining ingredients. Mix well.
5. Heat a 8″ cast-iron/heatproof skillet.
6. Add a tablespoon of oil of your choice to the skillet. Swirl the skillet to distribute the oil evenly.
7. Pour the potato egg batter into the hot skillet.
8. Cover and cook over medium low flame for 3min.
9. Transfer the skillet into the oven and baked for 15min-20min until fully cooked.
10. Voila! Piping hot Garam Masala Potato Frittata is ready to be served. Dig in!
